In August Greenolia starts monitoring closely the green fruit ripening rate in order to harvest it at the right time. All olives are harvested by hand so as to avoid bruising the fruit and immediately after follows the quality sorting. The curing is accomplished directly with a low concentration natural brine that creates a natural fermentation process.
