Oleum comes from a Greek variety of olives called ” Koroneiki” which is considered one of the best olive oil varieties, rich in phenolic compounds, resulting in a fruity and herbal flavor. This variety of olive tree is more than 2000 years old and its unique taste and aroma is due to volcanic soils and the unique micro-climate found in Crete.
